1 1/3 cups | (325 ml) | Canadian whipping cream, divided |
3/4 cup | (113 g) | semi-sweet chocolate, chopped |

Directions
- In a medium bowl, combine 1/3 cup (80 mL) of whipping cream and chocolate.
- Microwave the mixture in 20-second increments, whisking well in between, for approximately one minute, until smooth and glossy. Set aside to cool to room temperature (10-15 minutes).
- In the bowl of a stand mixer fitted with the whisk attachment or using an electric hand mixer, whisk the remaining whipping cream. Slowly add the sugar on high speed until stiff peaks form, about 5 minutes.
- Gently fold the chocolate mixture into the whipped cream until completely incorporated.
- Divide the mousse into 4 ramekins or small bowls, filling each with about 1/2 cup (125 mL) of mousse. Store in the fridge overnight or until set. Top each with whipped cream and chocolate shavings, if desired.
