Ingredients

1 1/3 cups (325 ml) Canadian whipping cream, divided
3/4 cup (113 g) semi-sweet chocolate, chopped
1 tbsp (15 g) sugar
Garnish
Canadian whipped cream
shaved chocolate

Directions

  1. In a medium bowl, combine 1/3 cup (80 mL) of whipping cream and chocolate.
  2. Microwave the mixture in 20-second increments, whisking well in between, for approximately one minute, until smooth and glossy. Set aside to cool to room temperature (10-15 minutes).
  3. In the bowl of a stand mixer fitted with the whisk attachment or using an electric hand mixer, whisk the remaining whipping cream. Slowly add the sugar on high speed until stiff peaks form, about 5 minutes.
  4. Gently fold the chocolate mixture into the whipped cream until completely incorporated.
  5. Divide the mousse into 4 ramekins or small bowls, filling each with about 1/2 cup (125 mL) of mousse. Store in the fridge overnight or until set. Top each with whipped cream and chocolate shavings, if desired.
