Lentil, Feta and Watermelon Mojito Salad

6 cups (1500 ml) watermelon, seedless and cubed
3/4 cup (175 ml) dry lentils (any colour)
1/2 cup (125 ml) Canadian cow's milk Feta cheese, crumbled
1/4 cup (60 ml) fresh mint leaves, chopped
1/4 cup (60 ml) canola oil
1/4 cup (60 ml) lime juice
1 tbsp (15 ml) honey


  1. Cook lentils according to package directions.
  2. In a medium size bowl, combine watermelon, lentils, and feta cheese.
  3. In a small bowl, whisk together mint, canola oil, lime juice, and honey.
  4. Pour dressing over watermelon mixture, toss to coat.
  5. Let the salad sit for 10-15 minutes, tossing occasionally, to allow full flavour to develop.
