Smoked Cheddar and Ham Grilled Cheese

Ingredients

4 tbsp (60 ml) butter, softened room temperature
1 yellow onion, sliced thin
3.5 oz (100 g) shaved ham
6 oz (175 g) applewood smoked cheddar, grated
4 slices white or sourdough bread
pinch of salt

Directions

  1. Starting on medium-high heat, melt 2 tbsp of the butter and begin to fry the onions with a pinch of salt. Once they have softened and begun to brown around the edges, reduce the heat to medium and continue to cook, stirring often until they have become soft and turned a deep brown, approximately 20 minutes. Transfer the onions to a bowl and wipe the pan clean.
  2. Butter 2 slices of bread and place them on the cutting board, buttered side down. On the unbuttered side of each, top with half the cheese, half the ham, followed by half of the caramelized onions. Top each with the remaining two slices of bread and spread the remaining butter on the top side of the bread.
  3. Heat your frying pan to medium heat and begin cooking the sandwiches. After 2 minutes, gently press the tops of the sandwiches and flip to the other side, press gently and cook for another two minutes. Continue flipping the sandwiches every couple of minutes until the bread is a deep golden brown and the cheese has melted.
  4. Cut each sandwich in half and transfer to a dinner plate. Enjoy with ketchup or a mix of two-parts mayo to one-part sriracha.
