Ingredients

2 cups (500 ml) Canadian cheddar cheese
1 cup (250 ml) Canadian cottage cheese
1 cup (49 g) fresh spinach chopped
6 slices (91 g) bacon, cooked and chopped
1 cup (250 ml) red pepper, chopped
1/2 cup (125 ml) green onions, chopped
1/2 cup (125 ml) jalapenos, chopped (optional)
6 large eggs, whisked
to taste salt and pepper

Directions

  1. Preheat the oven to 375°F (190 °C).
  2. In a large bowl, stir together all the ingredients. Divide the mixture evenly into a 12-cup silicone muffin pan.
  3. Place the muffin pan into a deep baking dish and fill with water until it reaches just below the rim of the muffin pan.
  4. Place it on the middle rack of the oven.
  5. . Bake for 20 minutes or until the egg bites reach your desired consistency.
