Yogurt and Granola Parfait with Haskap Berry Compote

Ingredients

6 clear jars
3 cups (750 ml) yogurt, 10-14% ML or thick Greek-style
2 cups (500 ml) granola
2 cups (500 ml) Haskap Berry Compote (recipe below)
Haskap Berry Compote
2 cups (500 ml) frozen or fresh Haskap berries
1 cup (250 ml) Haskap juice
2 tbsp (30 ml) maple syrup
1 tbsp (15 ml) tapioca starch

Directions

Build the parfait
  1. Set out clear jars (or small soup cups) and do the layers in each jar as you go.
  2. First spoon into the bottom of each jar a thick layer of yogurt. About 60 ml (2 tbsp) each.
  3. Second a thick layer of granola.
  4. Third a thick layer of yogurt.
  5. Fourth a thin layer of granola.
  6. Fifth and top layer, completely cover the granola and yogurt with haskap berry compote.
  7. Refrigerate and it is ready eat.
