Ingredients

Spinach & Garlic Mashed Potatoes
4 (medium) potatoes, peeled and quartered
2 tbsp (25 ml) butter
2 cloves garlic, minced
2 cups (500 ml) spinach leaves, packed
1/3 cup (75 ml) milk, warmed
1/4 tsp (1 ml) ground nutmeg
Peppered Steak
2 cloves garlic, minced
2 tsp (10 ml) freshly ground black pepper
1 lb (500 g) sirloin beef steak, cut into 4 portions
1 tbsp (15 ml) butter
2 tbsp (25 ml) brandy (optional*)
1/2 cup (125 ml) whipping cream
1 tsp (5 ml) salt, approximately

Directions

Spinach and garlic mashed potatoes
  1. Cook potatoes in medium saucepan of salted water for about 15 minutes or until tender; drain and mash.
  2. Melt butter in a medium frying pan over medium heat. Add garlic and cook until fragrant. Stir in spinach and cook for 1 to 2 minutes or until spinach is wilted. Stir spinach mixture into potatoes. Add remaining ingredients and stir until combined.
Peppered Steak
  1. While potatoes are cooking, press garlic and pepper into both sides of each steak. Melt butter in large frying pan over medium-high heat. Cook steaks, 3 to 5 minutes per side or until cooked to desired doneness. Remove from pan. Cover to keep warm and set aside.
  2. Heat brandy in same pan, scraping the pan to remove any cooked on bits. Add cream and stir until thickened slightly. Add salt to taste. Serve potatoes with steaks and sauce.
