Ingredients

1 cup (250 ml) All purpose flour
3/4 tsp (3 ml) Baking soda
1/4 tsp (1 ml) Kosher salt
1 cup (250 ml) white Sugar
1/2 cup (125 ml) Kefir
1/3 cup (75 ml) Canola oil
1 tsp (5 ml) vanilla
1 (large) egg + 1 yolk
2/3 cup (150 ml) Chopped nuts (pecans or walnuts)
3 (medium) Mashed bananas

Directions

  1. Grease and flour loaf pan with butter and flour.
  2. Pre-heat oven to 350 ° F.
  3. Mix flour, salt, baking soda together and set aside.
  4. Whisk together eggs, oil, sugar and kefir until combined. Pour over dry ingredients and mix until just combined.
  5. Add nuts and mashed banana ands and mix gently. Do not over mix.
  6. Bake for 60-65 minutes or until a toothpick inserted in the center comes out clean. Let rest before slicing.
