Ingredients

1 cup | (250 ml) | white Sugar |
1/2 cup | (125 ml) | Kefir |
1/3 cup | (75 ml) | Canola oil |
1 tsp | (5 ml) | vanilla |
1 | (large) | egg + 1 yolk |
2/3 cup | (150 ml) | Chopped nuts (pecans or walnuts) |
3 | (medium) | Mashed bananas |
Directions
- Grease and flour loaf pan with butter and flour.
- Pre-heat oven to 350 ° F.
- Mix flour, salt, baking soda together and set aside.
- Whisk together eggs, oil, sugar and kefir until combined. Pour over dry ingredients and mix until just combined.
- Add nuts and mashed banana ands and mix gently. Do not over mix.
- Bake for 60-65 minutes or until a toothpick inserted in the center comes out clean. Let rest before slicing.
