Nothing compares to the smell of freshly baked bread straight from the oven. However, many people shy away from baking because they don’t have time for kneading and letting the dough rise. If this sounds like you, these light-as-air cheddar chive popovers are the perfect way for you to enjoy that fresh-baked flavour without the prep time of regular bread.

Popovers are a light and airy bun made from simple ingredients: milk, eggs, flour, salt and butter. Preparation is a breeze, with all ingredients mixed in a blender (no kneading here!). By heating up the muffin pan for a few minutes before adding the batter, you can ensure that the popovers reach maximum height while baking.

While this recipe combines chives and Canadian cheddar for a savoury kick, it’s easy to change up the flavour to suit your personal preference. Here are two simple variations to try:

  • Sweet Popovers: Omit the cheddar and chives. Bake as directed. Serve with freshly whipped cream and berries.
  • Herbed Popovers: Instead of cheddar and chives, add 1 ½ tsp (7 ml) of your favourite dried herbs, like oregano, thyme and basil.

Cheddar Chive Popovers

Ingredients

2 tbsp (30 ml) butter, melted and divided
1 cup (250 ml) milk, at room temperature
2 eggs, at room temperature
1 cup (250 ml) all-purpose flour
2 tbsp (30 ml) finely minced chives or green onion
1/2 tsp (2 ml) salt
1/2 cup (125 ml) finely grated aged Canadian cheddar cheese

Directions

  1. Preheat oven to 400°F (200°C). Brush 1 tbsp (15 ml) butter into all tins of a 12 tin muffin tray; set aside.
  2. Just before oven is preheated, place milk, eggs, and remaining 1 tbsp (15 ml) butter in a blender. Blend until frothy, about 1 minute.
  3. Add flour, chives, and salt; blend until well mixed.
  4. For popovers to reach maximum height, place empty buttered muffin pan in preheated 400°F (200°C) oven for 3 minutes just before filling.
  5. Pulse mixture in blender once or twice. Remove muffin pan from oven. Immediately pour batter into hot muffin tins, filling each one a bit more than half full. Sprinkle with cheddar cheese.
  6. Bake for 20 minutes until very puffy. Serve immediately.
