The Jersey breed is known for having high percentages of fat and protein – the components that the dairy producer is paid on. While 95% of dairy cows in Alberta are Holstein breed, there are a number of farms that also have Jersey cows mixed with their Holsteins and some farms that exclusively have Jerseys.
