Yes, there are rules around the cheese made from raw milk.  In Alberta, cheese made from raw milk must comply to the Canada Food and Drug Regulation. There are a number of criteria in these regulations, but the main ones are the cheese must be held (aged) for a minimum of 60 days, and it must meet the minimum bacteria thresholds (E. coli and Staph aureus.).
