Awesome Fettuccine Alfredo

Ingredients

12 oz (340 g) dry fettuccine
1 tbsp (15 ml) butter
1 tsp (5 ml) minced garlic
1 tbsp (15 ml) all purpose flour
1 cup (250 ml) 1% milk
2 tbsp (30 ml) light cream cheese
1 cup (250 ml) Parmesan cheese, shredded

Directions

  1. Cook fettuccine according to package directions; drain and return to pot.
  2. Melt butter in a medium saucepan, add garlic and cook until lightly browned (about 1 min).
  3. Add flour and cook for 1 minute.
  4. Slowly add milk and stir with a whisk until thickened (about 5 minutes).
  5. Add cream cheese and stir with a whisk until melted.
  6. Add Parmesan cheese and stir with a whisk until melted.
  7. Add cheese sauce to fettuccine and toss to coat pasta.
