Ingredients

12 strawberries
12 grapes
1 navel ornage
4 eggs, beaten
4 slice milk bread
5 tbsp (25 ml) sugar
1 cup (237 ml) heavy cream
ice

Directions

  1. For best results, this recipe requires a 1hr chilling period before serving.
To Prepare the Fruit:
  1. Use a small knife to hull the strawberries (remove the leafy greens) and cut grapes in half. Peel oranges and cut into segments.
  2. Arrange the prepared fruit on a tray lined with paper towels to remove excess moisture.
To Make the Whipped Cream:
  1. Use two mixing bowls. In the larger mixing bowl, fill ice half-way into bowl. Place the smaller bowl on top of the large bowl of ice. Pour the whipping cream and sugar into the smaller bowl.
  2. Using an electric hand mixer, whisk the cream and sugar on medium-low speed until the cream has thickened to medium peaks. Keep the whipped cream chilled until ready to use.
To assemble the fruit sandwiches (simple method):
  1. Spread a big dollop of whipped cream onto each slice of bread and save the remaining whipped cream for later.
  2. Place the fruit on only one slice of bread per sandwich. Now, add more whipped cream to fill in any gaps between the fruit. Top off the sandwich with the other slice of bread, whipped cream side down towards the fruit.
  3. Gently press the sandwich and cover with plastic wrap and place another plate on top to help compress the sandwich lightly. Chill for an hour to let the whipped cream set. Unwrap and enjoy!
Optional: (for presentation purposes, follow these steps when assembling the sandwiches)
  1. Spread a big dollop of whipped cream onto each slice of bread and save the remaining whipped cream for later.
  2. Place the fruit on only one slice of bread per sandwich. Lay strawberries onto the bread from the middle outward and lay in the same direction with strawberry tips pointing to the bottom of the bread slice.
  3. For grapes and oranges, put them crosswise. The idea is to slice the bread in half (top to bottom) to expose the fruit in a beautiful manner.
Tips:
  1. To keep track of your cut line, take a photo of your fruit’s alignment and don’t change the orientation of your sandwiches when you move them.
  2. Now, add more whipped cream to fill in any gaps between the fruit. Top off the sandwich with the other slice of bread, whipped cream side down towards the fruit.
  3. Gently press the sandwich. Cut sheets of plastic wrap large enough to fully encase each sandwich. Wrap each one tightly on all four sides without changing its orientation.
  4. Use a marker pen to draw a line on the plastic wrap to mark the cut line for an attractive cross-section.
  5. Place the wrapped sandwiches between two plates to gently compress them, ensuring even pressure. Refrigerate them for at least one hour (or overnight) to allow the whipped cream to set.
  6. Remove the sandwiches from the refrigerator, unwrap one, and slice it in half along the marked cut line with a clean serrated knife to reveal the cross section. Serve immediately.
