Cheesy Garlic Chicken Wraps

Ingredients

2 cups cooked chicken, shredded and warmed
1 cup shredded cheddar
1 cup spinach, roughly chopped
2 firm roma tomatoes, diced
1/4 cup sour cream
2 cloves garlic, minced
1/4 tsp paprika
1/4 tsp dried parsley
1/4 tsp salt
1/4 tsp pepper
4 large tortillas
1 tbsp olive oil

Directions

  1. Combine chicken, cheese, spinach, tomatoes, sour cream, garlic, and spices in a large bowl. Stir well to coat.
  2. Place a tortilla on a flat work surface. Add the chicken mixture to the centre, leaving a 1” border around the edges. Fold in the sides of the tortilla, then roll it up tightly from the bottom. Repeat with remaining tortillas.
  3. Preheat a grill pan or skillet over medium-high heat. When the skillet is hot, add oil and swirl to coat the bottom of the pan. Add the wraps and cooked, until golden and crispy, about 4-5 minutes on each side.
  4. Transfer wraps to a plate and allow to rest for 2 minutes before slicing and serving. Enjoy!
