Three Cheese BBQ Chicken + Sweet Corn Pizza with Homemade Ranch Dressing

Ingredients

For the pizza
1/2 red onion, thinly sliced
2 tbsp white vinegar
1 tsp sugar
1/2 tsp salt
1 cup cooked corn (frozen or fresh)
1/2 cup grated mozzarella cheese
1/2 cup grated sharp cheddar
1/2 cup grated Parmesan
2-8" premade pizza crusts
1/4 cup BBQ sauce
1 lb cooked chicken, diced
2 tbsp fresh chives, minced
2 tbsp fresh cilantro, minced
For the ranch
1/4 cup plain Greek yogurt
2 tbsp mayo
2 tbsp fresh lemon juice
2 tbsp fresh dill, minced
2 tbsp fresh chives, minced
1 tsp dried parsley
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp pepper

Directions

  1. Preheat oven to 425 F.
  2. Place red onion, vinegar, sugar, salt, and pepper in a small bowl. Stir well to combine the pickled onions and set aside.
  3. Preheat a skillet over medium-high heat. When the pan is hot, add the corn and cook undisturbed for 2-3 minutes, until the corn is warmed through and charred in places. Remove from heat and set aside.
  4. Combine mozzarella, cheddar, and Parmesan in a bowl.
  5. Lay pizza crust on a flat surface, and spread bbq sauce over each one in a thin layer, leaving a ½” border. Add ½ the cheese mixture evenly across the sauce, then the chicken and the corn. Sprinkle with chives, and remaining cheese.
  6. Place each pizza on a parchment-lined baking sheet and cook until cheese is melted and bubbly, 8-10 minutes.
  7. While the pizza cooks, whisk together the dressing ingredients.
  8. When the pizza is done, top with pickled onions, chives, and cilantro. Drizzle with ranch dressing and enjoy!
