Ingredients
For the pizza
| 1/2 | red onion, thinly sliced | |
| 2 tbsp | white vinegar | |
| 1 tsp | sugar | |
| 1/2 tsp | salt | |
| 1 cup | cooked corn (frozen or fresh) | |
| 1/2 cup | grated mozzarella cheese | |
| 1/2 cup | grated sharp cheddar | |
| 1/2 cup | grated Parmesan | |
| 2-8" | premade pizza crusts | |
| 1/4 cup | BBQ sauce | |
| 1 lb | cooked chicken, diced | |
| 2 tbsp | fresh chives, minced | |
| 2 tbsp | fresh cilantro, minced |
For the ranch
| 1/4 cup | plain Greek yogurt | |
| 2 tbsp | mayo | |
| 2 tbsp | fresh lemon juice | |
| 2 tbsp | fresh dill, minced | |
| 2 tbsp | fresh chives, minced | |
| 1 tsp | dried parsley | |
| 1/2 tsp | garlic powder | |
| 1/4 tsp | salt | |
| 1/4 tsp | pepper |
Directions
- Preheat oven to 425 F.
- Place red onion, vinegar, sugar, salt, and pepper in a small bowl. Stir well to combine the pickled onions and set aside.
- Preheat a skillet over medium-high heat. When the pan is hot, add the corn and cook undisturbed for 2-3 minutes, until the corn is warmed through and charred in places. Remove from heat and set aside.
- Combine mozzarella, cheddar, and Parmesan in a bowl.
- Lay pizza crust on a flat surface, and spread bbq sauce over each one in a thin layer, leaving a ½” border. Add ½ the cheese mixture evenly across the sauce, then the chicken and the corn. Sprinkle with chives, and remaining cheese.
- Place each pizza on a parchment-lined baking sheet and cook until cheese is melted and bubbly, 8-10 minutes.
- While the pizza cooks, whisk together the dressing ingredients.
- When the pizza is done, top with pickled onions, chives, and cilantro. Drizzle with ranch dressing and enjoy!
