PASTRY
| 1 sheet | (225 g) | puff pastry, defrosted cut into 6 rectangles |
FILLING
| 1 | Red Delicious apple, thinly sliced into 24 pieces | |

| 1/4 tsp | (1.5 g) | salt |
| 3/4 cup | (170 g) | Canadian mascarpone cheese |
| 1/3 cup | (80 ml) | Canadian old cheddar cheese, grated |
| 1/4 cup | fig spread, divided |

Directions
INSTRUCTIONS
- Pastry: Preheat the oven to 400°F (200°C). Cut the puff pastry into 6 rectangles. Use a spoon to create a well in the middle, leaving ¼-inch of pastry around the edges. Use a fork to poke holes in the centre of the well to help it bake evenly
- Filling: In a bowl, combine apple slices with lemon juice, thyme and salt. Set aside.
- Spread 2 tablespoons of the mascarpone cheese onto the puff pastry, keeping ¼-inch away from the edge.
- Divide the cheddar cheese evenly between the puff pastry rectangles, then top with 4 slices of apples. Spread ½ tablespoon of fig spread over apples.
- Brush the edges of tarts with egg yolk. Bake for 20 minutes
- Garnish: Remove from the oven and garnish with fresh thyme
