Ingredients
Crust
1 1/2 cups | (374 ml) | all-purpose flour |
1/4 cup | (60 ml) | granulated sugar |
1 1/2 tsp | (7 ml) | baking powder |
1/3 cup | (75 ml) | butter |
1 | (large) | egg |
1 tsp | (5 ml) | vanilla |
3 cups | (750 ml) | blueberries |
Filling
2 tbsp | (30 ml) | all-purpose flour |
2 cups | (500 ml) | plain 2% yogurt |
1 | (large) | egg, lightly beaten |
1/2 cup | (125 ml) | granulated sugar |
2 tsp | (10 ml) | grated lemon or orange rind |
1 tsp | (5 ml) | vanilla |
Directions
Crust
- Combine flour, sugar, baking powder, butter, egg and vanilla in a mixing bowl or food processor. Mix until well combined.
- Press into the bottom of a 10 inch (3 litre) square, spring form or flan pan.
- Sprinkle with blueberries.
Filling
- Sprinkle flour over yogurt in mixing bowl.
- Add egg, sugar, lemon rind and vanilla.
- Mix by hand or with electric mixer, until smooth.
- Pour over berries.
- Bake in 350F (180C) oven for 60 to 70 minutes until golden.
- Serve warm or cold.
