Ingredients
1 1/4 cup | (300 ml) | mashed potato |
3/4 cup | (175 ml) | shredded cheddar cheese |
3 tbsp | (45 ml) | cooked bacon, chopped (about 4 slices) |
2 tbsp | (30 ml) | green onion, chopped |
8 | (8) | slices French bread |
3/4 cup | (175 ml) | sauerkraut, drained |
1/4 cup | (60 ml) | unsalted butter, softened |
1/2 cup | (125 ml) | sour cream |
Directions
- Mix together mashed potato, 1/2 cup (125 ml) cheese, bacon and green onion.
- Lay 4 slices of bread on work surface. Top with mashed potato mixture, remaining cheese and sauerkraut. Cap with remaining bread slices. Spread butter on outsides of bread.
- Heat nonstick skillet or griddle over medium heat; grill sandwiches for 2 to 3 minutes per side or until cheese is melted and bread is golden brown.
- Serve with sour cream.
