Pancakes
1 1/4 cup | (310 ml) | whole wheat flour |
3/4 cup | (175 ml) | all-purpose flour |
2 tsp | (10 ml) | baking powder |
1 tsp | (5 ml) | baking soda |
1/2 tsp | (2 ml) | salt |
1/2 tsp | (2 ml) | ginger |
2 1/2 tsp | (12 ml) | spices (I prefer 1 tsp [5 ml] cinnamon) |
1/4 cup | (60 ml) | chia seeds |
2 cups | (500 ml) | milk (1%) |
1 cup | (250 ml) | pumpkin puree (not pumpkin pie filling) |
2 | (large) | eggs |
2 tbsp | (30 ml) | melted butter |
2 tbsp | (30 ml) | vinegar |
3 tbsp | (45 ml) | brown sugar |
Simple Sautéed Bananas in an Orange Sauce
1 tbsp | (15 ml) | butter |
2 tbsp | (30 ml) | frozen orange juice concentrate |
1 tbsp | (15 ml) | brown sugar |
3 | bananas |
Directions
- In a large bowl, combine the flour, baking powder, baking soda, salt, spices and chia seeds.
- In a medium bowl, mix together the milk, pumpkin, egg, oil, vinegar and brown sugar. Then add to the flour bowl (#1), gently mixing until just combined.
- Heat a large frying pan to get your pan hot! Then turn down stovetop to medium heat. Grease your pan, then pour batter onto pan to make small circles to your desired size (~1/4 cup batter). Brown on both sides. Enjoy while hot!

Simple Sautéed Bananas in an Orange Sauce
- Melt the butter in a frying pan over medium heat. Then add the orange juice concentrate and brown sugar, and mix all together until smooth.
- Slice up the bananas into bite-sized chunks and add to the pan. Heat through for a minute. Voila!
