Ingredients
6 cups | (1500 ml) | watermelon, seedless and cubed |
3/4 cup | (175 ml) | dry lentils (any colour) |
1/2 cup | (125 ml) | Canadian cow's milk Feta cheese, crumbled |
1/4 cup | (60 ml) | fresh mint leaves, chopped |
1/4 cup | (60 ml) | canola oil |
1/4 cup | (60 ml) | lime juice |
1 tbsp | (15 ml) | honey |
Directions
- Cook lentils according to package directions.
- In a medium size bowl, combine watermelon, lentils, and feta cheese.
- In a small bowl, whisk together mint, canola oil, lime juice, and honey.
- Pour dressing over watermelon mixture, toss to coat.
- Let the salad sit for 10-15 minutes, tossing occasionally, to allow full flavour to develop.
