Yogurt Lemon Loaf

Ingredients

Loaf

1 1/2 cups (375 ml) whole wheat flour
1/2 tsp (2 ml) baking soda
2 tsp (10 ml) baking powder
2 tbsp (30 ml) lemon rind, thinly grated
3/4 cup (175 ml) granulated sugar
3/4 cup (175 ml) Greek-style yogurt, vanilla or lemon flavor
3 (large) eggs
1/3 cup (75 ml) butter, softened

Lemony syrup (optional)

1/4 cup (60 ml) lemon juice
3/4 cup (175 ml) icing sugar

Directions

Loaf

  1. In a medium sized bowl, whisk together flour, baking soda and baking powder.
  2. In a large bowl, mix lemon rind and sugar together by rubbing with fingers; add Greek yogurt, eggs and butter and whisk together until blended well.
  3. Incorporate dry mixture into wet mixture in 3 additions.
  4. Bake in a greased 1.5 L (8×4×3 inch) loaf pan at 350 F (180 C), or 325 F (160 C) if you have an extra hot oven, for 40 minutes or until a skewer that has been inserted comes out clean. Allow cooling on a baking rack for 10 minutes.

Lemony syrup (optional)

  1. Whisk icing sugar and lemon juice together until combined.
  2. Pour over top of loaf evenly (or brush on) and let sit for 10 minutes.
