Weeknight Caprese Grilled Cheese

1 sandwich


1 tsp (5 ml) butter
2 slices higher fibre bread of choice
1 1/2 oz (50 g) sliced mozzarella (or your choice of cheese)
2 slices fresh tomato
3-4 fresh basil leaves


  1. Heat a non-stick pan over medium heat.
  2. Take one slices of bread, add cheese, tomato, and basil. Top with other slice of bread.
  3. Melt the butter in heated pan- spread around. Add sandwich and turn heat down to medium-low. Let sit for 2-3 minutes, then flip. To help with cheese melting, cover sandwich (or pan) with a pot lid. Cook until both sides are golden brown.
  4. Serve with a side of Weeknight Tomato Soup
