Ingredients

2 eggs
1 1/2 tbsp (22 ml) butter, melted
1 1/2 cups (375 ml) milk
1 tsp (5 ml) vanilla extract
1 cup (250 ml) pumpkin puree
2 cups (500 ml) oats
1/2 cup (125 ml) brown sugar
2 tsp (10 ml) baking powder
2 tsp (10 ml) cinnamon
1/2 tsp (2 ml) nutmeg
1/2 tsp (2 ml) cloves
1 tsp (5 ml) ground ginger
1/2 cup (125 ml) chopped nuts or raisins (optional)

Directions

  1. Preheat oven to 350F (180C).
  2. Whisk eggs, butter, milk and vanilla, then stir in pumpkin puree.
  3. Mix remaining ingredients in a seperate bowl, then combine with egg mixture.
  4. Pour into a greased 8x8 inch (20x20 cm) pan
  5. Bake for 45 minutes.
