Ingredients

3free range eggs
⅔ cup(150 ml)2% evaporated milk
1 tsp(5 ml)vanilla extract
2 tbsp(30 ml)brown sugar, packed
¼ cup(30 g)almond flour (almond meal)
¼ cup(30 g)whole-grain flour
1 tbsp(15 ml)butter
2 cups(500 ml)fresh Canada-grown cherries (pitted)
1 tbsp(15 ml)confectioner’s sugar (optional)

Directions

  1. Preheat oven to 425 degrees F. Place 10” cast iron skillet inside.
  2. Add eggs, milk, vanilla, brown sugar and flours to a medium bowl, and whisk well to combine.
  3. Remove skillet from oven and grease with butter.
  4. Add pitted cherries to hot skillet and evenly distribute. Pour batter over cherries.
  5. Bake for 15-20 minutes, or until golden brown.
  6. Remove from oven and dust with confectioner’s sugar. Serve warm with crème fresh, and mint, if desired.
