June is Dairy Month. That means we want to celebrate everything dairy.

For the past five years our producers have worked hard to organize and offer hot breakfasts for their community at an event called Breakfast on the Dairy Farm. Breakfast on the Dairy Farm is a community event where a dairy farmer from each part of the province (north, central, and south) open their farm gates to the public to teach them about exactly where their milk comes from. Your milk comes from families just like yours and we want you to meet them! Our biggest goal is to offer transparency about where the milk you enjoy comes from.

These events have occurred all over the states, but two of our producer groups, the East of Olds Dairy Farmer group Club and the Southern Alberta Holstein Club decided they wanted to bring the event to Canadian soil. Their event has grown from one to three events across the province and annually they have helped reached thousands of consumers learn about where their milk comes from. They have done such an amazing job that they were recognized this year with an Alberta Farm Animal Care Award of Distinction for Communication.

What makes this event even better? You get a hot breakfast, too! But what’s a breakfast without pancakes? Well, if you follow the theme of stampede breakfasts, they’re not a breakfast unless there are pancakes!

So, to celebrate dairy month and our upcoming Breakfast on the Dairy Farm events, here’s a family favourite buttermilk pancake recipe. These pancakes are delicious both fresh off the griddle, or left over- tuck them in the toaster for a few minutes to heat them up and they’re as good as fresh!

Ingredients

2 cups (500 ml) whole-wheat flour (or all-purpose flour)
2 tsp (10 ml) baking powder
2 tsp (10 ml) baking soda
2 tsp (10 ml) sugar
1/4 tsp (1 ml) salt
2 cups (500 ml) buttermilk, room temperature
4 eggs, room temperature
1/2 cup (125 ml) melted butter, cooled

Directions

  1. Heat a griddle or large frying pan on medium heat. Preheat oven to 250F (120C).
  2. In a large mixing bowl combine dry ingredients. Make a well in the centre.
  3. Whisk together wet ingredients in a medium bowl and pour into well of dry ingredients. Whisk until just combined (it will still be a little lumpy). Let stand 5 minutes.
  4. Lightly butter the hot griddle or frying pan. Pour ~1/3 cup (60 ml) of batter on to hot griddle, and slighly spread to form pancakes.
  5. Cook until bubbles appear on top (~4-5 minutes), and bottom is golden brown. Flip and cook until bottom is golden brown.
  6. Keep cooked pancakes, covered, in preheated oven until ready to serve.
  7. Serve with butter, Greek yogurt, fresh fruit, peanut butter, syrup, or topping of your choice.
