I remember, as a kid, enjoying ice cream treats during the summer, purchased either from the store or from the ice-cream truck. Being a chocolate lover, I would always go for the fudgesicles, which I still do to this day.
Feeling nostalgic, I decided to take a trip down the ice cream aisle of the grocery store on a quest to find a fudgesicle made with real ingredients—you know, milk, cream, cocoa, sugar—only to find that there wasn’t one. Every single packaged fudgesicle that I came across contained ingredients such as corn syrup, palm oil, tricalcium phosphate, cellulose gum, guar gum, malt powder, and carrageenan.
Being that I am a health-conscious Mom, not to mention a Registered Dietitian, I wasn’t impressed—even if it was a treat. Considering the less-than-impressive selection at the store, I decided to make my own fudgesicles with some healthy ingredients that I had at home. After three attempts and lots of taste-testing, I found the perfect combination of ingredients to make a smooth, creamy and delicious fudgesicle, with just enough sweetness. As a bonus, we had some leftover fudgesicle mixture in the blender after filling our popsicle molds, which made a delicious chocolate pudding!
Although I didn’t hide the fact that there were avocados and bananas in these healthy treats, my husband had no idea that they were in there. My father-in-law polished one off in less than 5 minutes and my three-year-old son was covered in melted chocolatey goodness in no time. These summer treats (that could easily pass as a snack) have become a favourite in our house—one that I feel good about eating and serving to my family.
