Sweet Dessert Quesadilla
4 ancient grain tortilla wraps
4 tbsp (60 ml) peanut butter, divided
1 cup (250 ml) sliced fruit, divided (banana, strawberries, blueberries, or fruit of your choice)
1 tbsp (15 ml) butter
chocolate sauce (optional)
Sliced fruit for topping (optional)
1/2 cup (125 ml) vanilla Greek yogurt, for dipping
Savoury Dessert Quesadilla
4 ancient grain tortilla wraps
1 1/2 oz (50 g) Canadian Brie cheese, cut into thin slices
1 cup (250 ml) sliced pear
1 tbsp (15 ml) butter
chocolate or butterscot sauce (optional)
sliced fruit for topping (optional)
1/2 cup (125 ml) vanilla Greek yogurt, for dipping

Directions

  1. Heat a large non-stick pan over medium-low heat.
  2. Spread half of each tortilla with 1 tbsp (15 ml) peanut butter (if using). Top peanut butter (or other spread) with 1/4 cup (60 ml) each of sliced fruit of choice or cheese. Fold tortilla in half.
  3. Melt butter in the pan and swirl to lightly coat the pan's surface. Place prepared quesadilla in the pan. Allow to cook for about 2 minutes, or until lightly browned. Flip over and allow to cook another 2 minutes. Remove from pan and cut into 3 triangles.
  4. Serve with yogurt for dipping, additional fresh fruit, or sauce, if desired.
